Bitter Gourd with fried bean curd

Method:

Heat oil, add ground ingredients and salt and fry till fragrant. Add shrimps and fry for a few minutes. Add taukwa and coconut milk, and bring to the boil. When gravy thickens, add bitter gourd and cook till fairly dry, stirring now and then.

Ingredients:

  • 1 large bitter gourd – cut in half then cut each half into slices about 0.5 cm (1/4 in) thick; sprinkle with salt and let stand for about 15 minutes then wash
  • 300 g (1/2 kt) shrimps – peel
  • 2 large pieces hard bean curd (taukwa) – cut into squares and deep fry (if bought not fried)
  • 1 cup grated coconut – add 1 cup water and extract 1 cup milk
  • salt to taste
  • 4 tbsp oil
Grind to a fine paste:
  • 10 dried chillies – soak to soften
  • 1 medium sized onion
  • 1 clove garlic
