Sardine Salad

Method:

Arrange sardines on a platter. Mix all the other ingredients together and spread over sard ines. Sprinkle with coriander leaves before serving.

Ingredients:

  • 1 can local sardines (15 oz or 425 g)
  • 1 big onion, chop
  • 2 red chillies, slice
  • 1 green chilli. slice
  • pinch of salt
  • pepper
  • some small coriander leaves for garnishing
Cut into small squares:
  • 1/2 cucumber – peel
  • pineapple
  • 2 medium sized tomatoes
